Love potatoes as much as I do? (maybe its the part irish in me) Well here is a lovely alternative to the simple jacket potato. instead of slicing it into an `X` shape, slice the potato as you would cut thin chips but do not cut all the way through, leave a 2cm space at the bottom. then lather in butter and chives in the gaps and place in the oven at 190 degrees C for an 45 minutes, the potato will come out fanned out and beautiful!
