Pork Medallion With Haricots Verts amp Fingerling Potatoes

This is what I made for dinner tonight. I felt like doing something a little fancy. If you`ve seen any of my other food posts you might think that all I eat is fish and shrimp. But that`s not the case, I usually eat a lot of chicken and pork. I`m not really a fan of beef unless of course it`s a juicy steak. I won`t turn that down!

So I started with some marinated pork medallions in salt and lemon. I always marinate my meats in lemon because it also acts as a tenderizer. I preheated the oven to 350 F and I browned the pork in some garlic butter in a skillet on the stove. When that was done I threw the potatoes in with a little salt and put everything in the oven for about 30 minutes. The key is not to cut the meat too thin or else you run the risk of overcooking it due to the cooking time of the potatoes.
When there was about 10 minutes left I threw the haricots verts in a pan with a little oil, garlic and salt and sauteed.

I love making things simple and fairly quick and of course delicious. I believe I accomplished that by the sounds of my bf enjoying his plate ;)
