My boyfriend and I made grilled pork chops, bruschetta with pesto sauce for dinner. This is our third attempt at making pesto and we still haven`t nailed it yet but we`re getting there. The pesto recipes I`ve tried all vary in ingredients so I`m confused and we are just going with the flow but the sauce tonight we made is eatable!
What we used for pesto:
- Organic basil
- 2 cloves of garlic
- Cooked walnuts
- Squeezed lemon juice
- Olive oil
- Dash of black pepper
(No accurate measurements because it`s a trial run still)
We add all the ingredients in the magic bullet and blend until the pesto is a sauce form. The pesto is used for the bruschetta. Diced organic tomatoes, topped with mozzarella sauce on sliced sourdough bread.
For the grilled pork chops, we marinated with garlic powder, salt and pepper, and minced garlic. We marinated the grilled pork chops in the fridge for one hour prior to grilling. We grilled on the George Foreman Grill for ten minutes until meat is golden brown.
Overall: Dinner is delish, I can`t wait to have the pork chop leftovers for lunch tomorrow at work!
