This was my dinner ... the week before last. I had wanted to make a crock pot meal because they are simple and make my life so much easier especially where cooking is concerned. I had made a few crock pot meals the weeks prior so I wanted to try something different. I had wanted to make something with pork and ended up finding a crock pot seasoning pack while at the grocery store so that set my plans off in motion.
I picked up some center cut pork loin chops (which I trimmed of the fat prior to cooking). I basically followed the simple instructions on the package which stated to add 2 cups of water to the seasoning packet and stir to combine. I layered in my pork chops, then some onion (which I added which was not required), celery, carrots and potatoes. I ended up adding as an extra a can of drained diced tomatoes and a can of pork gravy because I was afraid the gravy would be too runny so I wanted some more consistency with pork gravy.
As sides I made some simple steamed white rice that I cooked up in the rice cooker and I boiled some corn on the cob. Overall it turned out really good. I had this for lunch the next day and it tasted even better. The pork literally would fall apart whenever you touched it -- tender pork? I`m game!
