I remember my mom making this cake for all barbecues and parties during the summer growing up. It was her most requested dish to bring to a party or if we were hosting a party shed be asked if she was making it. Because its loved so much she has this massive cake pan that she makes it in which takes 2 boxes of cake mix to make one cake. The cake is then so large that when I was growing up we had to put it onto aluminum wrapped cardboard because we needed something large enough to hold it and back in the late 80s and early 90s extra large industrial size baking sheets were not readily available.
My aunt was hosting a luau a few weeks back and my mother made this cake and brought it over. It has round pineapple slices with cherries in the center of them, butter which is mixed with brown sugar as the top of the cake aka the base prior to baking. The cake mixture is mixed together with some of the reserved pineapple juice added into the batter. You then bake it off to perfection. I sadly didnt get a piece of this as I wasnt able to attend the luau and was made a goodie plate and this unfortunately was left off it! Darn.
