this is my first cake with meringue icing, it was delicious! Very light and fluffy, and the pineapple provided a sweetness but wasn`t too sweet. Most certainly a good experience, and the cake baking process went almost perfectly until I got to the very end, when had to throw it in the oven for 1-3 min on broil. Well I had it in for maybe 10 seconds too long and it got a little burnt it some parts...super disappointing! It ended up being okay, I tried to peel off a little of the burnt parts, but as you will know if you have ever dealt with meringue icing after it is baked it becomes one continuous sheet so I really couldn`t just peel off the burnt parts. I covered the ugly kind of peeled parts with some chocolate whipped cream icing, and some sprinkles, (there is still a spot I didn`t cover that is in the picture) haha but thank goodness you couldn`t taste anything burnt while eating the cake and it ended up being one of my favorite cakes ever! :)
I will certainly be making more versions of this cake! meringue icing is something worth practicing!!
