1 ripe pineapple
3 egg whites
1 can sweetened condensed milk
vanilla wafer straws
Peel the pineapple and cut into slices.
Reserve 2 slices and pass the remaining by blender.
Pass the puree through a sieve and set aside.
Prepare a slurry by boiling for 5 minutes, the sugar with two cups of water.
Beat the egg whites, into a bowl.
Pour the syrup slowly over egg whites and beat with electric mixer on high speed, until a sigh that cling to the blades of the mixer.
Add the reserved pineapple juice and condensed milk.
Stop the mixer and mix lightly, a slice of pineapple cut into small pieces.
Pour the candy in a plastic bowl and store in the freezer.
Stir several times prepared to freeze evenly.
A store overnight in the freezer.
Mold ice cream into balls, place them on individual plates or bowls and garnish to taste.
Serve with straws vanilla.
