I made these cupcakes for a BBQ/birthday celebration at my house last month. Since I did not want a regular cake I decided cupcakes were the way to go, particularly since they are in portion size AND I was making them healthier without telling anybody. I find I don`t like sharing it`s healthier anymore because some people (particularly some in my family) will immediately dislike it without even trying it. So if you don`t tell them, they try it and when they question what it is because they enjoyed it I can drop a bomb on them HAHA. The recipe itself was really easy, it was a box of butter yellow cake mix and a can of crushed pineapple. You blend it all up and pour that mixture into cupcake papers and bake according to box directions. Then the cream cheese filling is just cream cheese, crushed pineapple that has been completely drained of all liquid, shredded coconut and some confectionery sugar. They were quite a hit, the pineapple made it nice and refreshing and the cream cheese made it taste almost sinful. The only thing I will say is, if you put them in the fridge let them sit at room temperature for a few before serving because if you don`t, one bite and all the cream cheese will end up in your mouth. But other than that -- these were divine! I`ll be making these again at some point and sharing with other folks at BBQ`s.
