Pig`s Tail with Lotus Root

This is a dish that my mom has made for dinner. When my mom found out that I loved eating pig`s tail, she decided to make a dish for me. I don`t know how she did it but it was very good when she was done cooking it and I love lotus root. The lotus root was so soft and yummy. And the pig`s tail was also. It wasn`t too salty and the texture of the meat was very soft. It`s takes a while to cook this dish cause you have to make sure the meat is cooked really good to get that right texture. I think this process is called braising. I think she took about almost an hour to cook this dish, so it is a lengthy process besides all the clean and chopping you have to do. So far she has made this twice already and I believe she is gonna make it again and I just can`t wait. Now I just have to ask her for the recipe and the directions on how to cook it. Great served with a hot bowl of rice. Yumm...
