I love a good grilled cheese sandwich, but recently, I wanted to try something a bit different. My friend had once made me a pesto, provolone, goat cheese, and tomato grilled cheese so I thought I would try out my own :)
I used gluten-free bread with zucchini in it (delicious!) and on one side spread traditional pesto. On the other side, I put provolone cheese and then slices of organic apples. I then sprinkled some goat cheese on (this part is probably the most optional - you really have to have a taste for goat cheese. I`m still learning to acquire the taste myself haha) and put the two halves together (protip: put all `loose` ingredients on one side and then flip the `non-loose` side onto it. It seems like common sense, but the amount of times I`ve seen people struggling.... lol). In a buttered pan, place the sandwich and leave it until it turns a golden brown, then flip! The cheese should melt perfectly this way.
Biting into this grilled cheese is like biting into a slice of heaven. The pesto and provolone go amazingly together, but then there`s the pleasant sweet crisp of apple and the smooth goat cheese. Yum!!!
