One of my boyfriend`s favourite kinds of cookies is peanut and oatmeal cookies, so I make them for him now and then. I changed it up a little bit recently when I found a recipe for "Peanut Crunch Cookies" in my Canadian Living Holiday Cookbook from a couple of years ago.
So, without further ado, here is the recipe! It should make about 50 cookies. If you want to make a smaller batch, just halve or quarter the recipe, as necessary. =)
3/4 cup unsalted butter
1/3 cup natural smooth peanut butter
2/3 cup packed brown sugar
1/3 cup granulated sugar
1 tsp vanilla
1-1/2 cups all-purpose flour
1 cup large-flake rolled oats
1 tsp baking soda
1/4 tsp salt
1 cup coarsely chopped honey-roasted peanuts
In large bowl, beat butter with peanut butter until smooth; beat in brown sugar and granulated sugar until fluffy. Beat in egg and vanilla.
In separate bowl, whisk together flour, oats, baking soda and sa< stir into butter mixture. Stir in honey-roasted peanuts.
Roll by 1 tbsp (15 mL) into balls. Place, about 2 inches (5 cm) apart, on parchment paperlined baking sheets. Using fork, press to make crisscross pattern.
Bake in 350°F (180°C) oven until golden, about 12 minutes. Let cool on pans on racks for 5 minutes; transfer to racks and let cool completely."
These cookies were pretty good! I think the addition of the roasted peanuts makes them taste AWESOME. I will definitely try making these again. My boyfriend liked them, as well - so no complaints there! :)
