This is a dinner I made a few days ago using udon noodles, peanut butter marinated chicken, bell pepper and shredded carrots. I loved the sweetness that the peanut butter lent the dish and then the savory from other ingredients in the marinate such as soy sauce and worcestershire sauce. I garnished with toasted peanuts for a nice crunch and to boost the already existing nutty flavor.
