I have a confession...peanut butter and jelly is still one of my most favorite foods that I still enjoy as much as I did when I was a kid, now I have kids of my own and I just love to get creative with it. I was nearly devastated the day that I found out that my youngest daughter had a potential nut allergy, nonetheless when I am able to spend time with my oldest daughter who is a bigger fan than I am we get to work!
When I discovered these cupcakes I knew I just met heaven! A cupcake filled with jelly and topped with a peanut butter frosting, I even substituted the frosting for a chocolate fudge butter cream frosting for my youngest and the results were still great.
This recipe is easy to prepare and I encourage that you get creative with the type of cupcake batter you choose, my next venture will be a chocolate one...I am already half tempted to get to it already!
