I made this for dinner the other night it was quick and easy and tasted great.
200g of chorizo
200g Penne Pasta (or pasta shape of choice)
1 Small Onion, diced
2 cloves of garlic finely chopped
2 tbsp chopped parsley
2 tsp olive oil.
1 carton (300g) or tomato passata
Salt and Balck Pepper
1. cut chorizo in wedges and fry in a pan (only a teaspoon of olive oil needed for fryingas chorizo releases oil) once lightly brown on both sides set aside on a paper towel.
2. In a large pan add the oil drained from the chorizo and 1 tsp of olive oil to heat up. Add chopped onions and leave with lid on to soften. after 5 minutes on medium heat add garlic and parsley to pan. Once all is soft add in some of the tomato passata and stir in. then add as much tomato as you want for your sauce. Leave to bubble and get hot. Season with salt and pepper
3. add chorizo to the pan of tomato sauce and leave to warm through. Cook pasta and serve when ready. Add sauce ontop of pasta and tuck in :)
