Here is my recipe for a creamy pasta dish I made. It`s takes under half an hour, and you can adjust to make more for more people :)
I used 1 chicken breast, some linguini pasta, 2-3 baby bell peppers, about half a tomato, a handful of baby spinach and some Philly cooking cream.
I used whatever veggies I could find in the fridge, so feel free to add whatever veggies you have left over.
I started off with some raw chicken. If you have pre-cooked chicken, it may be easier to use, but I actually had to cook mine. So I just cooked them in a pan on medium heat with just a touch of cooking spray and some salt and pepper.
While the chicken was cooking I boiled some water for my pasta, and cooked the linguini until it was al dente. I then drained the pasta, but reserved some of the water.
After the chicken was cooked through, I took it off the heat and let it cool a little bit. I used that time to slice some small strips of baby bell peppers, and cube about half a tomato (it was left over from a sandwich my brother had made). You can also use grape tomatoes for this and just slice them in half, but I just used the tomato that was already there! Lol
Once my veggies were chopped up, I sliced the chicken and returned it to the pan with the sliced peppers. You can choose to leave the chicken breast whole but I find it easier to eat this way. Once it was heated through, I added the tomato and the cooked pasta.
I added some of my herb and garlic flavour Philly Cooking cream, but you can use a jarred sauce, or use some actual cream and add your own spices and flavours. Since the cooking cream is really thick, I added some of the pasta water to help it spread - this also helps the sauce stick to the pasta better.
At the last minute, I also added some baby spinach and let it wilt just a tiny bit with the dish.
After tossing and making sure everything was coated, I put it onto a plate and it was ready to serve.
It was delicious, easy to make, and pretty fast!
