Oven Fried Chicken Recipe
Here is yet another recipe for you all. This has become one of my new favourite ways to prepare chicken since it is easy and delicious. And it also require just a few minutes of prep!
This recipe uses panko bread crumbs to get a nice crunchy exterior to the chicken while avoiding the heavy calories involved with fried chicken.
First, you need your chicken cut into fairly equal size pieces. I like to use chicken breast, and depending on the size trim them down to 2 or 3 pieces each. Try to avoid having thicker and thinner pieces since you want all the chicken to be cooked through properly and at the same time.
Next, you need to create your wet mixture. There are a few options for this, but the easiest is using either some olive oil (which is what I used) or some soften butter. You can also used buttermilk. I also added some minced garlic to the olive oil and set it aside in a small bowl.
You also want to prepare you breading mixture. I used panko breadcrumbs season with some salt, pepper, dried basil and some freshly grated parmesan cheese. Mix this up in a small, shallow dish.
You also want to make sure you have a greased oven pan or dish ready. Try to pick one large enough to hold all the chicken with enough room so that the sides can also crisp up as well.
You need to dip the chicken in the wet mixture first before coating in the dry mixture and transferring to the pan. I find the easiest way to do this is to keep one hand wet, and the other one dry. For example, pick up the chicken with your right hand and only using that hand cover with the olive oil mixture. Using the same hand, pick up the chicken and drop it in the dry mixture. Use your left hand to sprinkle the dry mix on the chicken until you can pick it up and press the mixture in without getting your hand wet. Use your left hand to transfer the breaded chicken to the final pan. This way you end up with beautifully breaded chicken while avoiding breading your fingers! Lol
You want too cook the chicken at 375 for at least 30 minutes, depending on the thickness of your chicken. All juices should be completely clear when the chicken is fully cooked.
If you want extra crispy chicken, you can also cook these on an oven safe rack so you get the chicken crispy underneath as well. I just flip these halfway through and they still turn out pretty good!
