So this is what I cooked for lunch yesterday. I made fried rice with egg, garlic and sweetcorn. I usually have a bag of frozen mixed vegetables in the freezer but I was out =[ I put a whole can of sweetcorn to 2 cups of fried rice and like 5 eggs. It was quite a bit of sweetcorn but I liked it like that. If you don`t like it you can put less or whatever.
For the chicken I made Oven Fried Chicken. Basically I fried the chicken until it turned brown in color then I put it in the oven to continue cooking. For the chicken I used 6 chicken legs and I washed them thoroughly with a little bit of lime to get that chicken smell away from them and trimmed the skin. I put 2 slits in each of them and lightly seasoned it with garlic salt. Then in a bowl I put about 2 cups of flour then added garlic salt, Mrs. dash onion and herb salt-free seasoning and chili pepper flakes. I tasted the flour to make sure it had enough seasoning. I placed the chicken inside the flour and lightly coated them, then fried them till brown and placed them in a 350 F degree oven, covered for 1 hour to cook thoroughly. Then I took of the foil and let cook for 15 minutes till the skin was crispy. I like to eat fried chicken but I don`t like to stand in front of the stove and wait for the chicken to cook, so this version is much easier for me.
TADA! Lunch was done! It took a while to cook but I was cleaning around the house so it was done when I was done! I ate my chicken with Thai sweet chili sauce, that`s how I like to eat my fried chicken. To wash it done I had koolaid. This is my new fav flavor from them, it just tastes like straight up mango! I love it!
