I first heard of the Oreo Cheesecake from a youtube channel called Nicko`s Kitchen. :) So i decided to bake one myself.
BUT! I was so busy being excited that I`ll be baking this amazing looking cheesecake that when I went shopping to get all the ingredients I didnt really memorise the ingredients and didn`t really do much research. The recipe Nicko gave included cream cheese... in the UK i didn`t know that it was called soft cheese. So I was searching for cream cheese and obviously I couldn`t find it. So I ended up buying Creme Fraiche. :). After my ingredient shopping trip I realised that I needed soft cheese. :) So I went and got it. But seeing as I bought Creme Fraiche I decided to fuse two recipes into one so that I can use all the ingredients that I have used. I ended up just making my own recipe because I used my own amounts too hehe. :P
Here is my recipe
300g creme fraiche
250g soft cheese (cream cheese)
55g block butter melted
1 tsp vanilla extract
25g caster sugar
1)crush all the oreos in a food processor or by hand. Its best to crush it with least amount of chunks.
2)melt the butter and add to the crushed oreos and mix it till well blended. Leaving some of the mixture of oreos left for the topping, Spoon the rest into the base of a 20cm round, loose-bottomed cake tin, pressing down well. Then allow it to cool.
3)Meanwhile, whisk the 250g cream cheese and 300g Crème Fraîche until thick and smooth then whisk in the vanilla and sugar. Then add the oreo mixture you left into the mixture.
4)Spoon over the biscuit base and chill well. Leace in the fridge for at least 3 hours before serving/eating.
HOPE YOU ENJOY THIS RECIPE. :) The mixture of creme fraiche and cream cheese makes this really nice light cheesecake topping :)
