I made a very simple, one pot dinner tonight that really packs a punch in the flavor department. It can be suited to your own tastes too in spiciness and changing up the meat used... this is one of those meals that is quite versatile.
I used a coupon that I received through the BzzAgent "Taste Of Summer" campaign for $5.00 off Private Selection ground beef. I know most people were creating burgers for their campaign but I went with something that is a good pot luck dish. It travels and reheats well.
I started by browning the beef, along with a yellow bell pepper that I cut into small squares, and 2 cloves of garlic (minced). I didn`t bother to drain off the meat because I got very, very lean ground beef. When the meat was cooked, I added 28 oz of diced tomatoes, 3 cups of beef stock, a package of french onion soup mix, tons of cracked peppercorns (a peppercorn medley), some cayenne pepper, a bit of garlic powder, and onion powder. I allowed that to come to a boil and then simmer for about 10 minutes. Finally, I poured in 3 cups of rice, put a lid on the pot, and removed it from the heat. After about 10 minutes I came back to it and mixed everything together one last time. Voila, fast one pot dinner!
Something that is nice about this dish is, as I said, it works well for a summer pot luck style get together meal but also fantastic in the cooler months because of the heat the different peppers add to it.
