Today for lunch I wanted to make something vegetarian since I had not cooked with vegetables in a while. So I chose to make okra using my mom`s recipe. If you are interested here`s the recipe!
Tomatoes (peeled and cubed)
Red pepper powder
Fresh chopped coriander leaves
Quantities are subject to personal taste preference.
Firstly you will wash the okra, cut it into pieces and then fry it in some olive oil until it is light brown in color. It shrinks after cooking just like spinach so it may look like you are not left with much. Drain the oil and take the okra out in a plate
Secondly, in the same pan sauté finely sliced onion with the garlic and ginger paste as well as some salt. When the onion becomes translucent add cumin powder, red pepper, turmeric and then the tomatoes. Cook until tomatoes soften. Then add back the fried okra and pour some lemon juice on top. Garnish with fresh coriander leaves and serve!
I served mine with Roti, which is a type of bread popular in Southeast Asian countries. It can be bought at Indian grocery stores. As an alternative you can serve the okra with tortillas as well.
