Quick, easy, delicious and healthy Yes, its true, Im not lying :D
Quick only 10 - 15 minutes (good when you dont have much time or patience in preparing it as required in many other elaborated cake recipes);
Easy - you only have to mix well all the ingredients and then put in a pan cake;
Delicious because it is :D (The combination of all the ingredients together are delicious);
Healthy - because it takes healthy ingredients: oats (a very nutritious cereal, with lots of calcium, iron, protein, vitamins), honey, cinnamon, milk
So you dont have any excuse not to trying it, you`ll only need:
1 1 2 cup (tea) flour, 1 1 2 cup (tea) of oat flakes, 1 1 2 cup (tea) sugar, 2 whole eggs, 1 2 cup (tea) of sugar cane molasses or honey, 1 spoon (soup) of cinnamon, 2 (tbsp) butter, 1 (tsp) baking soda, zest of 1 lemon 2 cup (tea) of milk, 150 g of dried fruit of your choice (I used pine nuts, almonds rolled, nuts and raisins).
Butter a cake pan and sprinkle with flour.
In a bowl mix the sugar with the eggs and beat well, then add the honey, butter and milk, mix well and add the lemon zest, the flour, the baking soda and cinnamon. Finally, the oats and the dried fruits (Note: A trick I always use for cakes with dried and candied fruit so they cant stay all at the bottom of the cake is to involve them in flour before adding them into the cake). Mix well without beating too much.
Put in the cake pan, and bake about 1 hour in a moderate oven or until cooked (you should check preferably after the 1st 30 minutes with a toothpick ,till comes out clean).
