Now, Who`s Got The Wiener Schnitzel?

Ahhh, Wiener Schnitzel! This is certainly a dish I`ve grown up eating and love it so. Have you ever had Wiener Schnitzel? If not, you don`t know what you are missing. Wiener Schnitzel is a traditional Austrian dish which consists of pork cutlets (it used to be made with veal) which are pounded flat, breaded and deep fried. SO GOOD! Growing up we garnished the top of our schnitzel with a tomato and scallion sauce (which was mixed with Italian salad dressing). The flavors blend so amazingly.

Since I do try to eat relatively healthy, I took a classic and gave it a healthier twist. I pounded my pork chops flat, dredged them in eggbeaters, then put them in Italian seasoned bread crumbs. I then sprayed a baking sheet, put my meat in, sprayed the top and let it bake off in the oven, flipping half-way through. When done, I topped it with sliced tomatoes (we didn`t have scallions, sadly) and Italian salad dressing. For a side, I paired it with green beans and a side tossed salad.

This was SUCH a great meal and I didn`t even really "realize" it wasn`t fried. The bread crumbs toasted up nice and crunchy in the oven and the pork cutlet stayed nice and moist. I`d say, job well done, Chef Shannon ;).
