Ahhh, Wiener Schnitzel! This is certainly a dish I`ve grown up eating and love it so. Have you ever had Wiener Schnitzel? If not, you don`t know what you are missing. Wiener Schnitzel is a traditional Austrian dish which consists of pork cutlets (it used to be made with veal) which are pounded flat, breaded and deep fried. <strong>SO GOOD!</strong> Growing up we garnished the top of our schnitzel with a tomato and scallion sauce (which was mixed with Italian salad dressing). The flavors blend so amazingly.
Since I do try to eat relatively healthy, I took a classic and gave it a healthier twist. I pounded my pork chops flat, dredged them in eggbeaters, then put them in Italian seasoned bread crumbs. I then sprayed a baking sheet, put my meat in, sprayed the top and let it bake off in the oven, flipping half-way through. When done, I topped it with sliced tomatoes (we didn`t have scallions, sadly) and Italian salad dressing. For a side, I paired it with green beans and a side tossed salad.
This was SUCH a great meal and I didn`t even really "realize" it wasn`t fried. The bread crumbs toasted up nice and crunchy in the oven and the pork cutlet stayed nice and moist. I`d say, job well done, Chef Shannon ;).
