I like baking but I`m in no way the world`s greatest baker (or even close...let`s be honest haha!). So when I saw this NO BAKE Cookie Balls recipe, I was ecstatic! This recipe is perfect for a quick dessert that can be done when you don`t have time to preheat that oven. It`s best to make these a day or two ahead so the flavor can set in and they taste extra good.
Below is the recipe. It`s SUPER easy to follow so give it a try!
1 cup (6 ounces) semisweet chocolate chips
3 cups confectioners` sugar
1-3/4 cups crushed vanilla wafers (about 55 wafers)
1 cup Diamond of California Chopped Walnuts, toasted
1/3 cup orange juice
3 tablespoons light corn syrup
Additional confectioners` sugar
1. In a large microwave-safe bowl, melt chocolate chips; stir until smooth. Stir in the confectioners` sugar, vanilla wafers, walnuts, orange juice and corn syrup.
2. Shape into 1-in. balls; roll in additional confectioners` sugar. Store in an airtight container. Yield: 5 dozen.
