Nicaraguenese Food

Over the weekend my husband and I went to visit my inlaws up north. I always love going because his mom cooks so good and i love getting away for the weekend. My husbands family is from Nicaragua which is located in Central America. It took a few yrs for me to get use to his moms cooking. I have to say there a few dishes i don`t like but i feel bad telling her but the breakfast is so good.

For breakfast we had something called gallo pinto which is a mixture of rice and red beans which come out really good. Most latin countries make something similar. His mom also fried a tortilla and fired an egg on top of it. This is fairly easy to make. While you fry the tortilla in hot oil you wait till it get a little hard and then crack an egg on top. I use a spoon to pour oil on top. You could make it over easy or over hard.

Also on the plate is queso frito (fried cheese). Im not sure what kind of cheese she uses but OMG its so good. Last but not least is maduro (fried plantain). It has a sweet taste to it. Everything is delicious!!!!
