My take on Cucumber Sunomono

This is a nice light snack, side dish, or salad. Call it what you want, it`s versatile and delicious

what you need:
rice wine vinegar
sesame seeds
sesame oil (optional)
cucumber (i used english cucumber, the ones that are wrapped in plastic)

how to:
unwrap the cucumber and wash very well since you will be eating the skin, garden cucumbers need to be peeled because the skin is very waxy
chop off the ends and slice thinly -- you can use a peeler or mandolin if you have on! the slices will be thinner and a little more uniform
coat in vinegar and let sit for like 10 minutes
pour out the vinegar and squeeze out the excess
toss with salt, sugar, sesame seeds, and sesame oil
no measurements because this is mostly to taste but i used about 1 tbs salt/sugar 1 tsp seeds, a few drops oil

i don`t follow traditional recipes because i think it`s too vinegar-e and prefer the sesame flavor
