It`s been a while, at least over a year since I`ve made anymore cakes. This year since I`m feeling much better and my eldest son requested a coffee flavored cake I decided to make one. Why not! I`ve stumbled upon a recipe I wanted to try anyways. I happened upon it on YouTube while in the hunt for coffee flavored deserts! I know, I love coffee. But not straight up black coffee. Haven`t acquired the tastebuds for it yet... Lol
But omg!! The cake was soooo good! Better than those coffee mouse cakes I buy from 99 Ranch. Even my husband says it tastes better than the store that we usually buy our coffee flavor cakes from, also the mocha ones.
There was just the right amount of coffee flavor. The cake itself was really fluffy, not dense at all like the American bakery cakes. I can definitely see myself making this cake over and over again.
Here`s the recipe if you would like to try it....
100 g egg yolks
49 g sugar
200 g egg whites
69 g sugar
55 g oil
55 g hot water
9 g instant coffee
90 g cake flour
2 g baking powder
400 g heavy whipping cream
5 Tb sugar
5 g instant coffee
6 g hot water
Preheat oven to 330 degrees farahenheit. In a bowl melt 9 grams of instant coffee with 65 gram of hot water. Separate the egg yolks from the whites into two separate bowls. Add the 40 gram of sugar to the yolks and whisk until it`s thick and a pale yellow. Then add the oil and mix. Add the coffee next and whisk. Then sift in the flour and baking powder. Then mix until well incorporated.
In a separate bowl , whisk the egg whites with a pinch of salt. When you see bubbles starting to form, you then add the 60 grams of sugar slowly in 2-3 additions and whisk until stiff peaks form. Then fold egg whites into the yolk cake mixture in 3 additions. Pour into two 9 inch pans and bake for 30-40 min (baking time may vary due to pan used and oven temperature). Let cool.
For whip cream topping. Melt the instant coffee with hot water and let cool. In a separate bowl, whip the whipping cream with the sugar until soft peaks form. Them mix in the coffee mixture. Ice your cake m top with fruit or what your hearts desire and enjoy.
***One thing to take notice is that I used a dark colored baking pan and my cake was done in about 20 min. So it was done under the recommended baking time. So I suggest you insert a toothpick into the center of the cake at around 18-20 minutes to check the cake and adjust your baking time based on that.

Oh and I usually scrape off the whip creams on cakes, but I licked the plate clean off of this one...lol
