I love cakes, sweets, cookies but I admit I don`t eat that often sweet things... I`m just craving for things, go to the store, buy them, get home and in 70% of the cases I don`t get to eat what I bought... How crazy is that??
But because is summer already and it`s so freaking hot, I like eating refreshing things, like cheesecake. I first tried cheesecake when my boss brought some a few months ago.
I`ve always wanted to make one but I didn`t have the tools I needed, like a tray or a mixer (<em> that might sound weird, but I lived in a one-room flat and I had to buy almost everything and since I don`t bake/make cakes that often I never bothered buying trays and stuff...</em>).
Well, I finally got what I needed and last weekend I decided to make this cheesecake (it`s my second time making one actually) and although at first I thought it was a bit sweeter than I would`ve liked it turned out just delicious.
The <strong>recipe</strong> I used is this one:
300g Philadelphia Cheese
70 g sugar
200g digestive biscuits
200g pastry cream
This doesn`t require baking which I absolutely love!
You grind the biscuits well, then you add the butter and mix it all together really good. You press the mixture into the springform tin/ tray and press a little up the sides and then put it in the fridge while you make the filling.
I mix the Philadelphia cheese with the sugar until the sugar starts to melt then I add the pastry cream and mix it using the mixer until it gets smoother and fluffier (around 7 minutes).
Then I pour the cheese mixture on top of the biscuit base and put it in the fridge.
I don`t put anything on top as sometimes I like to eat it as it is, or use different types of jam ( in pics I used blueberry jam but I also like using cherry jam).
I believe this is one of Nigella`s recipes (at least that`s what my boss told me, lol! cause she gave me the recipe).
This cheesecake is really easy to make and it doesn`t take more than half an hour!
It`s refreshing and you can make it as sweet as you want by adding more sugar.
