I almost always have mixed salad greens in my fridge, because they are basically nutritional powerhouses! :) They are a great way for me to get vitamins, minerals, and fibre. So I do like to incorporate them into whatever I`m eating about once a day.
Lately, I`ve been finding that I`ve been dressing up my salad greens in the same way each time! I really like the combo I`ve come up with, so I thought I`d share it with you all. :)
Here`s what I put in my "go-to" salad:
<ul><li>Mixed Salad Greens (a large handful)</li>
<li>1/2 an avocado</li>
<li>3 tbsp crumbled feta cheese</li>
<li>1 to 2 tbsp balsamic vinegar</li>
<li>1 to 2 tbsp olive oil</li>
<li>1 thin slice toasted whole-grain bread, cubed</li></ul>
Olive oil and balsamic vinegar is simply my favourite dressing ever. It`s so simple, but it really makes the salad greens taste great. I use cubed toast as "croutons". I`m currently using a really thinly-sliced, dense whole-grain bread by a German brand called Mestemacher. It works really well for "croutons", and is really flavourful. Finally, I just really love feta cheese and avocado, and they taste pretty yummy together!
