This cinnamon bread recipe was given to me by mom and is something that I make regularly ever since she gave it to me because it is easy, moist and delicious! I made a loaf last night to enjoy with some friends.
1/4 cup butter (softened)
1 cup sugar
2 cups all-purpose flour
1 teaspoon vanilla
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons brown sugar
1 tablespoon cinnamon
1 cup sour milk (in order to make sour milk, add one tablespoon of vinegar to the milk and let it sit for a few minutes)
1. Cream the butter and sugar together. Then add the eggs and vanilla and continue to mix. Then add the flour, salt, baking powder and baking soda, continuing to mix. Add the milk slowly, and mix gently until the lumps are gone but do not overbeat or you will end up with flat batter.
2. In a separate bowl, add the brown sugar and cinnamon and blend together.
3. Put 1/2 of the batter in a greased loaf pan. Sprinkle with brown sugar and cinnamon mixture. Cover with remaining batter and zig-zag a knife through it. Bake at 350 F for 40-50 minutes.
