this was the ice cream cake we had for my dad`s birthday. we typically get cakes from the chinese bakery, but we decided to get an ice cream cake this time around since it`s been so hot lately and we wanted something refreshing.
we looked at the cakes at coldstone and baskin robbin`s but they were all so expensive for a tiny little cake! pshhh NO, not a good deal. i`ve had a coldstone cake for my birthday in the past too, and it honestly was nothing special.
we actually ended up getting this cake in a frozen shelf at albertson`s. it was just over $15 and it was HUGE. when i read the description on the label of the package (see last photo above), i knew i had to get it. it`s basically coffee ice cream with a chocolate cookie crust and lots of sliced almonds on top. SOOOOOOO GOOD
the cake ended up being absolutely divine! we didn`t have those big number candles and we didn`t want to light up enough candles for my dad`s age, so we just kinda made the numbers with the candles.
the cake ended up lasting us for a really long time too. we were able to eat it for the next week, and it made a nice little afternoon snack for my sister (and me on splurge days).
my only complaint about these cakes and basically ice cream cakes in general is that it`s really hard to cut through. you have to let it thaw. i don`t think the best knife in the world can cut through an ice cream cake right out of the freezer!
