Great recipe for lunch, nothing better than some sweat.
¼ cup unsalted butter
1 cup brown sugar
½ cup peanut butter
1 teaspoon vanilla extract
1 cup flour
½ teaspoon salt
½ teaspoon baking powder
¼ teaspoon baking soda
½ cup toppings (i used semisweet chocolate chips, mini m&ms & toffee pieces.)
preheat oven to 325f.
line an 8 square pan with foil or parchment paper & spray that with nonstick spray.
melt the butter in a large saucepan over medium heat. remove from the heat & stir in the sugar & peanut butter. allow to cool for a few minutes before adding the eggs & vanilla.
in a small bowl stir together the flour, salt, baking powder & baking soda. mix dry into wet, stirring until well incorporated. spread batter in the pan (i dont know if you can even really call this a batter, its super thick, more like dough.) sprinkle toppings evenly over the top and press down a bit. bake for 20 to 25 minutes until a toothpick comes out with just a few crumbs. dont overbake!
makes 12-16 blondies.
