Recipe for these awesome CUPCAKES!
*Stir 4 tps. instant coffee powder into 1 1/4 cups warm water until dissolved
*Line 8 jumbo muffin cups with jumbo cupcake liners
*Preheat oven (according to cake mix)
*Prepare 1 pkg (15.25oz) devil`s food cake mix according to package directions, using 1/2 cup oil, 3 eggs and substituting espresso mixture for water
*Divide amound muffin cups
*Bake 21-29 minutes
*In bowl oh high speed, beat 1 1/4 cups cream, 2 Tbs confectioners sugar and 3/4 tsp instant expresso coffee powder until stiff peaks form
*If desired to serve, place each cupcake in a coffee cup
*Top each with about 3 Tbs whipped cream, sprinkle with 1 tsp miniature chocolate chips and drizzle with 1 tsp store bought caramel sundae topping
Makes 8 Cupcakes!
