I`ve been trying to bake something new every week. So I ended up baking some M&M cookies for last week which was Easter. These cookies are from a regular sugar based cookie recipe in which I just added some m&m`s to it. I decided to use pastel m&m`s cause I love pastel colors and it was the week of Easter. Great time to go out and buy some Easter colored m&m`s even tough I hardly eat them anymore. These came out better than expected because I had let the dough rest in the fridge for 24hrs to let the flavor develop. I think these would taste great without the m&m`s too. These taste better than the regular sugar cookies I have had in the past. There were more flavor to it and I think it was due to the fact that I had let the dough chill in the fridge for a day and I had also increased the amount of vanilla the recipe had originally called for. Another reason might be that I used butter instead of shortening in the recipe. But if you do use butter, I do recommend you chill the dough for at least 30 minutes or more so that you don`t end up with flat cookies.
