I love shoyu ramen, it tastes really crisp and clean =)
Shoyu ramen does not use a pork bone soup base, which is why the broth turns out clear rather than white. Instead, they use a soy sauce base and add a bit of miso to it giving it more flavor.
I prefer shoyu ramen because there`s actually less oil in the soup base. And I can actually finish an entire bowl of ramen by myself. When I used to order the pork bone soup base, I could never finish my bowl because the soup was filling enough.
This bowl was actually from Hong Kong I believe. Their shoyu ramen is topped with naruto (not the character from the anime, it`s the fish maw shaped with a pink spiral), seaweed and bbq pork. I had to order the egg and corn separate though.
You can actually make the shoyu soup base at home using soy sauce, bonito and miso soup. I`ve tried perfecting it but I`m still a long way away =P
One day, I`ll make my own ramen.
