I don`t have a gluten sensitivity or intolerance, but there is a special diet bakery in my neighbourhood that makes vegan, nut-free, soy-free, and gluten-free cupcakes. And they are delicious, so I occasionally stop by and pick up one of their cupcakes for a treat. :)
The last time I went there, they had cookie dough-filled cupcakes with a mini cookie on top. Yes, they are as amazing as they sound! The cupcake base was vanilla, but the frosting was chocolate mint. There were chocolate chips inside the cookie dough, as well. It was also topped off with little green mint sprinkles!
While I find some gluten-free baking to be not-so-yummy - some cakes and breads I`ve tried have been hard, gummy, and rubbery - these cupcakes are always soft, with a tender crumb. They are definitely the best "special diet" cupcakes that I`ve ever tried!
