Aren`t these cute?? I`ve been making Pumpkin Chai a lot lately, and hence I have a lot of pumpkin puree left over. Aside from Pumpkin mug cake, I decided to make these mini muffins. The recipe did call for a lot of butter which I wasn`t too fond of, but I only ate a couple :) I think if I were to try this again I would maybe skip the wash of butter at the end before coating with sugar and just try to toss it in the sugar while it was hot? As the muffins cooled, the sugar condensed/reduced and I ended up with kind of a sticky wet syrupy muffin. Not sure how to fix that problem, but it still tasted pretty good :)
