This weekend, I made some mini apple pie cakes. I used a recipe for a loaf/cake, but cooked the batter in a muffin tin, since everyone at home prefers individual-sized desserts, lol.
I used this recipe, from a Canadian Living pamphlet I received with the last issue I received (I divided it in half - it makes 9 mini cakes):
1 cup white sugar
1/2 cup vegetable oil
1 tsp vanilla
1 cup all-purpose flour
1 tsp ground cinnamon
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
2.5 cups spartan apples, cubed
Preheat oven to 350 F. Whisk together dry ingredients (except for the sugar). Combine sugar and wet ingredients. Add dry ingredients to wet ingredients, and stir until just combined. Fold in cubed apples. Spoon batter into muffin tin lined with muffin/cupcake liners. Bake for 30-35 minutes (I reduced the cooking time from the original recipe since I was making mini cakes and not one large cake).
I haven`t had any of the cakes (I`m mostly into "healthy" desserts these days), but my boyfriend and roommate loved them! The recipe didn`t yield a very "sturdy" cake, so the tops kind of caved in during baking, making a sort of crust on top. They definitely are a cake, not a muffin. If you prefer a more muffin-y texture, you could use a plain muffin recipe and add apple chunks to it. :)
