With fall being here now, it is the season for squashes! This is a spaghetti squash and it has a lot of nutrients just like most squashes do. I think this is the best tasting squash because you can eat it like spaghetti with some butter and cheese, or with meatballs and tomato sauce, or you can put it into a casserole or just eat it plain. What I did to microwave it and prep it for any of those variations, is microwave it for 2-3 minutes. This softens it so you can cut it in half. Then place face down into 1/2 " of water filled dish. Microwave another 12-15 minutes. Then just take out the seeds and scrape out the noodly flesh. It is so good and I will show you a couple meals I made with this spaghetti squash!
