I found this recipe on Pinterest and included it in my baking spree this weekend. I have enough food for the whole week. This chicken I have made twice now so that proves right there that it is GOOD! I used thinly sliced chicken breasts so it didn`t have to cook as long and it was really tender. I didn`t use as much mayonnaise as the recipe called for and instead used more parmesan cheese. It still turned out delicious. Also I used the mayonnaise that has the olive oil instead of vegetable oil, so hopefully that saved a few calories or was a little healthier. It tastes like a breaded chicken but has no carbs! This is a yummy meal and goes well with the casseroles I made this weekend. :-) By the way, mine did not come out looking as good as the reference picture.
