Meat Stuffed Bell Peppers

This is what I made last night. It is stuffed bell peppers. I typically take a vegetarian route, but I came across a recipe using ground beef and thought I`d give it a shot. I know my husband prefers when I include meat into our hey, it was worth a shot. I will say it was good, but I prefer my vegetarian version more.

Basically, I started by cutting some bell peppers in half and then dropping them into boiling water for 3-4 minutes to soften them up. Then in a pan I browned up some ground beef, onion, and garlic. Next I mixed in some diced tomatoes, salt and pepper. I removed the pan from the heat and mixed in some shredded cheddar cheese. I spooned the mixture into the bell pepper halves and topped with more cheddar cheese. The bell peppers were put into a baking dish and then put into a 350 degree oven for 25 minutes.

They are very flavorful and good. Like I said, though, I still prefer my veggie style (has things like rice, beans, corn, etc in it.)
