Its the beginning of mango season and I love it! Mangos are like my favorite fruit ever especially the phillipine mangoes! I recently bought a whole box and decided to make on my mango desserts since I had family coming over. I dont know if this is necessarily a Filipino dessert but since I can remember my mom has been making this for years. Its a very simple yet really delicious dessert which we like to call Mango Float and its a frozen dessert with layers of mango, cream and graham crackers. The ingredients are very basic and can be found at any grocery store and it includes: 2-4 mangoes depending on the size of your pan that you are putting it in, 1 can of condensed milk, 1 can of all purpose cream, 1 packet of knox gelatin, and a box of graham crackers.
First, take your mangoes and slice it into strips. Next, combine both the condense milk and cream into a bowl and mix together. Then take half of the milk and cream mixture and place it into a small saucepan on low heat and add the 1 packet of gelatin and whisk until smooth and combined. If necessary you can strain the mixture to get the cream smooth. Then set it aside to cool down and once cooled down combine it with the other half of the cream mixture. Next is when the assembling begins! I used a pyrex loaf sized pan and I started out with a layer of graham crackers ( you can used crushed graham crackers too instead!) then a layer of cream to cover the crackers then a layer of mangoes I repeated that until I reached the top of the pan and ran out of my ingredients. Then once its all assembled cover with plastic wrap and place in the freezer for about 2 hours for it all to settle then you can serve!
Originally my mom never used gelatin in her recipe but since Ive been making it I had added it because with the gelatin the cream part sets up to a pudding like consistency but without the gelatin it would be liquidy and would have to always be put into the freezer. For my version that does have gelatin I like to keep mine in the freezer after assembling for a few hours then serve but if there are any leftovers I can easily just pop it into the fridge instead of the freezer. Plus with my version that does have gelatin it wont melt. So as you can see its a super easy dessert and its also really good!
