I back with some more to share about my trip this summer! In case you didn`t read in one of my previous posts, I had the chance to take a trip of a lifetime this summer, visiting Indonesia, Australia and Armenia!
I could probably post a million things about my trip, but I`m keeping it more simple and only posting a few things from my trip...
This post is about the most delicious vegan pizza I had at a place called Mandela`s on the Gold Coast in Australia. I was actually staying in a hostel in Brisbane, and decided to rent a car for the day to go to Byron Bay and Gold Coast. One of the girls who I was sharing a room with lived in Byron Bay and offered to show me around which was amazing!
After seeing the sights in Byron Bay, including a lookout at the beach where we saw dolphins playing among the surfers, we headed to Gold Coast. At this point, we were feeling hungry since it was dinner time, and she suggested a cute little restaurant called Mandela`s that is known for serving local, organic, vegan and vegetarian dishes.
This place was super cute, with it`s own little garden where we could wait since the tables were all busy - they even brought us some blankets since it was chilly out.
In the end, we finally got a seat, and I settled on a Pesto pizza, with zucchini, broccoli, sundried tomatoes and carmelized onions. They even had `cashew cheese` which meant the dish was all vegan, but still very delicious. My favourite part was the crust which was made of Spelt flour.
I never would have enjoyed this meal if it wasn`t for hostelmate, Rinda, so sending my thanks to her!
