Making Chipotle Burritos At Home

Last week I got a craving for Chipotle but I wanted to see if I could make the burritos at home, myself. I did some searching online for some recipes that would mimic the food from Chipotle. I found some and read the reviews of those who had tried making it. After finding one that had the best reviews, I wrote down the ingredients and over the weekend we picked everything up.

On Sunday I made our version of Chipotle`s barbacoa burritos. They make theirs with beef, but we did pork. It was absolutely DELICIOUS! I made the meat in a slow cooker and then chose the sides that we`d typically put onto our burritos. I even made a version of Chipotles cilantro & lime rice. I have to say, it was pretty spot on! It was amazingly good!

On my burrito, I put some of the rice, some black beans, some of the barbacoa, some cheese, and some sour cream. That was rolled up into a flour tortilla and enjoyed!

We had quite a bit of left overs, which made for good lunches. We used nacho chips with the left overs, which was also really good.

This is definitely going in our rotation to be made again. Basically, for the price of two burritos, I was able to get everything I needed and made a TON of burritos and have left overs for lunches. Win-win!
