Okay, okay... you all have seen about a zillion mac & cheese variations from me. This will be a zillion and one! I have tried some and they were horrible, others were just okay, and a few were fan-freaking-tastic. This one was pretty darn amazing.
First of all, the ingredients mesh nicely together. It is a party in the mouth. Secondly, my husband made this. (mostly). Yup! I was feeling pretty bad today and by the time he got home from work I had a thundering headache that was making light and noise just kill me. My husband was sweet enough to offer to make the dinner. He just needed to know what to do. So, I told him everything step by step and he wrote it down. There were only a couple of things that I helped with. For the most part he whipped it together.
What makes this mac & cheese a bit more unique and special are the cheeses and the fact that a bit of meat is included. We used three cheeses: mozzarella (yeah, that is right! Not a typical mac & cheese kind of cheese but man was it good), sharp cheddar, and parmesan (another unusual choice of cheese). The meat we used was tiny cubed prosciutto.
Those simple changes made this recipe mouth-watering good. It was so ooey and gooey. Oh my goodness! It was rich and had the perfect amount of saltiness from the cheeses and meat. This was extremely satisfying and very comforting.
I`m proud of my husband for doing such a good job with it. He kept telling me "Honey, I got this. I got this, just go lay down." And, really, he did. I`m just a micro-manager when it comes to my kitchen and the food being cooked in it, lol!
