Living in thailand this has got to be my favourite recipie to make for a tasty lunch!!
It was taught to me by my boyfriends mum in Had Yai...
You can get the ingredients at any Asian Supermarket..
1 Papaya..peeled and shredded or grated
Handful crushed peanuts
2 spoons fish sauce
6 crushed garlic
i tblsp of palm sugar or brown sugar
1Tblsp of dried shrimp
2 small chopped tomatoes
Handful of french long beans chopped
and of course fresh red chillies!!!..i normally have 4 which is quite spicy!!
if you have a pestle and mortar you can mix it all up in that or otherwise a big bowl will do!
serve it with steamed rice and fresh veg such as white cabbage and cucumber
Its a really refreshing and healthy lunch
