Lunch: Spinach Salad

Today for lunch I rounded up some left over items I had in the fridge from past dinners and snacks. Together, they made a REALLY good salad. I had some cheeses and bacon left from making my /viz/loaded-macaroni-cheese, spinach from the /viz/spinach-tortellini-soup, and bell peppers from my/viz/healthy-snack-bell-peppers I started with a good handful of spinach then roughly cut up some iceberg lettuce. I topped that with some cut baby carrots, yellow and orange bell peppers, bacon, shredded cheddar cheese, bleu cheese, and then everything was drizzled with a balsamic vinegar dressing I made. I just combined some balsamic vinegar, extra virgin olive oil, salt, pepper, and garlic. It makes for a nice, zesty, but light dressing....and a much healthier option over something like ranch or French dressing. It was satisfying but didn`t leave me feeling like I had eaten a ton. This was a good way for me to use up some food, too, so it didn`t go to waste. If I had had some grilled chicken it would have made this salad a lot better, though. I like to top my salads with sliced up chicken when I have it. Oh, and some avocados would have been good (dang, now I`m going to have to buy all of these ingredients again just to make a piled up salad, lol!)
