Lunch: Roasted Veggie amp Shrimp Sandwich

I wanted to eat something light for lunch today and while I was looking through my fridge and pantry to see what I had in stock I came up with this sandwich.

I had an Italian loaf that I sliced up and toasted in the oven with slices of zucchini and shrimp. I minced some garlic and mixed it with some olive oil and drizzled that on top of the bread (I didn`t take a picture of this step). This made the bread taste like garlic bread. I simply seasoned the zucchini and shrimp with a little olive oil, salt and pepper. I set the oven on 425 degrees and let everything cook in the oven. While I waited, I sliced up an avocado. I had to pull out the bread first because I didn`t want it to get too toasted. When the shrimp and zucchini were done, I just assembled the sandwich by placing the avocado slices first, then the shrimp and zucchini.

The sandwich was delicious! I`ve been trying to eat a little bit healthier because bikini season is coming up and my body is not ready for it yet! LOL I was full after eating this but I could have easily had another one. :)
