Over the weekend I went to buy ingredients to make my own pita wraps for lunch. Yesterday I seasoned a boneless and skinless chicken breast with grounded black pepper, and cooked it for the pita wrap. Unfortunately the pita wasn`t soft and it fell apart. Instead, I cut the pita bread in half like a pita pocket and filled it with chicken, cajun cheese, diced tomatoes and cucumber slices. I haven`t had cajun cheese before but I thought I`d give it a try since I like the cajun chicken pasta from Red Lobster. Then I put it into the microwave for about a minute to melt the cheese. It was good but the chicken was dry, probably over cooked. It was my first time cooking chicken so I spent more time to make sure it`s fully cooked.
