Low Carb Series: Spicy Lemon Garlic Shrimp

I haven`t prepared shrimp for a meal for the longest time, so while I was at the store, I decided to pick some up to have for dinner. As a lighter idea, I decided to make a Spicy Lemon Garlic Shrimp.

It`s pretty simple and quick, so for those quick fixes this is a great recipe to have on hand. Have your shrimp already de-shelled and de-veined, and make sure to pat them try with a towel. Quickly start to stir fry the shrimp using a tablespoon of coconut oil. Once the Shrimp start to turn color (pink), add in 5 cloves of diced garlic (that is where a lot of the flavor and aroma comes in).

Continue to stir fry the garlic and shrimp all together. And once the shrimp is close to being fully cooked through toss in diced fresh jalapenos and parsley. For a light sauce, add a tablespoon of butter with 3 tablespoons of lemon juice.

Turn the heat down and allow the lemon sauce to thicken a bit. Then remove it all from the heat and serve immediately. I had these as is, but you can definitely serve this over a serving of spaghetti squash to go with that low carb theme, or have it with a side of quinao salad.
