Who says chicken has to be boring and plain? One of the most important things you have to remember if you`re trying to cut the amount of carbs in your diet is that you need to increase your protein intake. Protein is really important when it comes to refueling your body and burning bad fats.
One of my favorite protein option is of course chicken. I am from Chicago, so of course I love my red meats, but it`s not always good to have so much beef in your diet. Therefore, at least 5 out of the 7 days of the week I usually have chicken as my option.
Here, I made a very quick meal that took 5 minutes to prep and 30 minutes to bake. I tossed some chicken breasts (with bone in) in a bit of extra virgin olive oil, salt, pepper, ground mustard, paprika, and caraway seeds. Add a bit of lime juice for taste.
Place the oven rack at the top rack (this is key for getting that nice brown roast on the chicken) and bake at 450 for 25 minutes.
If you want a little bit of carbs, you can add little fingerling potatoes to your meal. Just remember a little goes a long way when it comes to potatoes and other starches.
